Snapper is a wild-caught fish and the Costa Rican table classic for the oven, the grill, or a whole fried fish. At Delimar we process it for wholesale in three presentations — whole at 1/2-3/4 and 1-2 lb, a 500-1500 g fillet, and a 170-220 g portion — all scale-on and with FSSC 22000 food-safety certification. Whole, fillet and portion, always scale-on

Whole snapper ships gutted, scale-on and frozen, in 1/2-3/4 and 1-2 lb sizes, either in bulk in a 10 kg master case or in 12 x 800 g, 9.6 kg Master Case. It is the presentation kitchens ask for when they serve the fish whole.

The 500-1500 g fillet is skin-on and scale-on, vacuum-packed in a 10 kg master case. The 170-220 g portion adds the deboning — skin-on, scale-on and boneless — and is handled in bulk at 10 kg or in 20 x 500 g, 10 kg Master Case; on the shelf, that same portion is sold in a 500 g pack.
