The skin-on fillet is handled in size 500-1500 g, individually frozen, scale-on and boneless, vacuum-packed in a 10 kg master case: it is the cut a kitchen asks for when it wants that crisp golden skin on the griddle. The skinless fillet is likewise individually frozen and boneless, vacuum-packed in a 10 kg master case or in 20 x 500 g, 10 kg Master Case.
The 100-200 g portion ships skin-on, scale-on and boneless, individually frozen, in bulk in a 10 kg master case or in 20 x 500 g, 10 kg Master Case. On the shelf, the retail line carries the skin-on fillet by variable weight and the skinless fillets in a 500 g pack. Every presentation is processed under FSSC 22000 certification with a HACCP system.
