White Marlin
White marlin is a wild-caught fish that Delimar works in three cuts: a 2-4 kg loin, saku at 200-300 and 300-500 g, and medallions from 100 g. The loin and the medallion are frozen at sea as well as individually frozen; all three are processed skinless and boneless, and vacuum-packed in a 10 kg master case. It is a wholesale-only line, for restaurants, hotels and distributors.
