Conger Eel

Conger eel is a wild-caught fish whose flesh shines in casseroles, soups and on the griddle. At Delimar we process it as a 700-1500 g skin-on fillet, a 1000-3000 g skinless fillet, and a 100-200 g portion, all boneless and vacuum-packed or in a 500 g box. Wholesale for restaurants, hotels, supermarkets and distributors, from our plant in El Cocal, Puntarenas.

Two fillets in different sizes, and the 100-200 g portion

The skin-on fillet is handled frozen, boneless, in size 700-1500 g, vacuum-packed in a 10 kg master case. The skinless fillet steps up in size — 1000-3000 g — and is likewise boneless, vacuum-packed in a 10 kg master case. The difference between the two is size and skin; the rest of the handling is the same.

The 100-200 g portion ships individually frozen, skinless and boneless, in bulk in a 10 kg master case or in 20 x 500 g, 10 kg Master Case: it is the stable cost-per-plate format. On the shelf, the retail line carries the fillets by variable weight and the portions in a 500 g pack, both with FSSC 22000 food-safety certification.

Frequently asked questions

What size is the conger eel fillet?
It depends on the presentation: the skin-on fillet is handled at 700-1500 g and the skinless fillet at 1000-3000 g. Both are boneless and vacuum-packed in a 10 kg master case. On the shelf the fillet is sold by variable weight, and anyone who needs fixed servings usually opts for the 100-200 g portion, which comes in 20 x 500 g, 10 kg Master Case.
How is conger eel used in the kitchen?
It is a flesh that shines in casseroles, soups and on the griddle. For broths and stews, the 100-200 g portion, skinless and boneless, goes straight into the pot; for the griddle or the oven, the 700-1500 g skin-on fillet lets you cut to the size of the dish. All three presentations come boneless, so they need no extra cleaning.
